When my husband gets the chance, he really loves to cook! One of his most favorite things to cook ( or maybe his favorite to eat!) are enchilada's! He fries each corn tortilla, dips it in enchilada sauce, places it in a well sauced dish and fills it with ground beef with taco/enchilada seasoning and cheese. He then rolls it up ( loosing most of his finger prints) and when done, finishes them off by pouring the left over sauce and cheese on top! (Even added some olives on top this time to make it pretty!!) SO YUMMY!! YOU MUST TRY THIS!! This is also good with shredded chicken!!!
